Sweet & Smokey Pulled Pork

Ingredients:

  • 1 tsp Lemon juice

  • 3 lbs Pork butt, boneless (substitute boar, if desired)

  • 3-4 Tbsp Sweet & Smokey Rotisserie Rub, divided

  • 1 c Water

  • 1/2 c Butter

  • 16 oz Tomato sauce

  • 2 Tbsp Ketchup

  • 5 oz Worcestershire Sauce

  • 1/4 tsp Mustard

  • 1 Tbsp White vinegar

  • 1/2 c Granulated sugar

  • 1 Tbsp Molasses

  • 6-8 Kaiser rolls, toasted

Instructions:

Place pork in large crock-pot. Sprinkle with 1-2 Tbsp Sweet & Smokey Rotisserie Rub, to taste. Pour one cup water in bottom of crock-pot and add lemon juice. Cook on low for 8 hours or until pork pulls apart easily.

Prepare BBQ sauce by melting butter in medium saucepan. Add tomato sauce, ketchup, Worcestershire sauce, mustard, vinegar, sugar, and molasses. Simmer for 15-20 minutes. During the last hour of cooking, add 1/2 cup of sauce to pork juices in the crock -pot.

When pork is done, remove from crock-pot, and drain drippings. Pull pork into shredded pieces and place back in crock-pot. Toss well with 2 Tbsp Sweet & Smokey Rotisserie Rub. Add desired amount of BBQ sauce and stir well. Keep warm. Serve on toasted Kaiser rolls.
